Low Carb Gingerbread Cake

When you think of holiday baking, gingerbread desserts are sure to come to mind.  Gingerbread men, cookies, and cakes are all part of getting into the holiday spirit.  Fill your home with the scent of gingerbread baking in the oven without ruining your diet.  This gingerbread cake recipe from Splenda is a great recipe for any mom with gestational diabetes to try this holiday season.

Gingerbread Cake Ingredients:

(Makes about 18 slices; approximately 180 calories & 30 carbs per serving.)
 
2 cups unsweetened applesauce
¾ cup molasses
⅓ cup vegetable oil
3 eggs
3 cups all-purpose flour
1⅓ cups SPLENDA® No Calorie Sweetener, Granulated
2 tsps baking soda
1 tsp baking powder
½ tsp salt
2 tsps ground ginger
1½ tsps cinnamon
½ tsp ground cloves
 
Directions:
Preheat oven to 350 degrees.
 
Mix dry ingredients in large mixing bowl.  Add in applesauce, molasses, oil, and eggs and blend with hand mixer until well mixed.
 
Pour batter into greased bunt pan or bread pan.  Bake in oven for 45 minutes to an hour.  Check with tooth pick to see if cake is done.  Cake is done when tooth pick comes out clean.
