Sugar Free Lemon Bars

Are you a sweet tooth looking for a sugar-free fix? This recipe is great for moms who have gestational diabetes. It's low carb, low sugar, and made with real lemons.

Sugar Free Lemon Bars Ingredients:

(Makes about 20 bars; approximately 175 calories & 21 carbs per serving.)

Crust:
2 sticks of margarine
1/2 cup of Splenda
2 cups of flour
1/8 tsp of salt

Lemon Filling:
6 large eggs
3 cups of Splenda
1 cup of freshly squeezed lemon juice (about 6 lemons)
1 cup of flour
*2 tbsps of lemon zest (optional)
*Confectioners' sugar (optional)

Directions:
Preheat oven to 350 degrees.

Mix ingredients for crust by hand. When the mixture starts to form into a dough, knead by hand. Once you have a nice consistency to your dough, spread dough evenly in greased 9x13 baking pan. Press dough along sides of pan to create an edge.

Bake in oven for about 15 to 20 minutes or until lightly browned.

Mix ingredients for lemon filling. Mix dry ingredients in large mixing bowl. Add in eggs, lemon juice and lemon zest. Blend well with hand mixer. Pour mixture into crust.

Bake lemon bars for 30-35 minutes in 350 degree oven.

Once cooled sprinkle with confectioners' sugar and garnish with lemon peel. (Confectioners' sugar adds some carbs to this recipe - up to 2 carbs per serving depending on how generous you sprinkle.)
