Quick and Easy Chicken Quesadillas

Quesadillas are an easy meal to make when you’re short on time. This is a really simple recipe that anyone can make. These freeze up great so you can save them and reheat them later for a tasty snack.

Ingredients:

2-4 chicken breasts, diced
1 (1.27 ounce) packet fajita seasoning
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded Monterey Jack cheese

Directions:

Preheat oven to 375 degrees.

In a large skillet cook chicken, onions, and peppers on medium heat until chicken is no longer pink. Mix in fajita seasoning and simmer on low heat until fajita seasoning is thoroughly mixed in with chicken.

Spray a couple of baking sheets with cooking spray and begin preparing the quesadillas. Lay tortilla shells flat on baking sheet and cover with chicken, onion, and peppers. Then top with shredded Cheddar and Monterey Jack cheese. Place a second tortilla shell over the top so that the chicken mixture is sandwiched between two shells.

Bake tortilla shells in the oven for 10 or 15 minutes, or until cheese and melted and bubbly.

Slice tortillas with pizza cutter and serve with salsa, sour cream, and guacamole.
