Sugar Free Sugar Cookies

Want to bake up some sugar cookies to leave for Santa, but need them to be sugar free so you can nibble on a few yourself? Try these sugar free “sugar cookies”. Roll them out just like you would the old fashioned Christmas cookies you remember making when you were a kid – just do it without all the sugar. These are great for diabetic moms but are also a nice alternative to serve the kids this holiday season.

Sugar Free Sugar Cookie Ingredients:

(Makes about 2 dozen; approximately 130 calories & 13 carbs per cookie)
3 cups all-purpose flour
1 cup of Splenda
2 sticks of margarine, softened
1 tablespoon vanilla extract
2 eggs
1 teaspoon salt
Food coloring (optional)
Directions:
Beat butter and Splenda in mixing bowl for about a minute. Add in remaining ingredients and mix by hand. When batter starts to get sticky, knead by hand into dough. If making colored cookies, divide dough into 2 or 3 equal portions and add food coloring to dough. Cover dough with plastic wrap and place in refrigerator for about an hour.
Preheat oven to 350 degrees.
Sprinkle counter with flour and roll dough into ¼ inch thickness. Cut dough with cookie cutters and place on greased baking sheet.
Bake for approximately 8-10 minutes or until cookies are lightly browned.
